A New Year! Always a perfect time to start over, start fresh. Get a leg up, or a head start. A great time to crumple up all the things we didn’t do in the last year, and write a brand new, list of amazing things (big or small) we wish to accomplish in the next year. <br />

2013 has been a crazy year....beyond crazy. But in a YAY, fabulous, can I do that over again type of crazy. It was the first year that really I didn’t have anything that really dampened/or yucky-fied my overall mood. I guess except a lovely story about the USPS delivering an empty box to my sisters house, which should have been filled with Christmas presents. <br />
<br />
But that, is definitely a story for a later date. <br />
<br />
No, today I’m excited to dust off this poor, neglected blog, and I’m resolving that I will pick up the pieces, and lovingly nurse her back to health. I feel like I’m a horrible friend to her...<br />
<br />
"I’m Sorry I haven’t been able to spend time with you, but between deployments, kids, school, and a growing <a href="http://lesleyworleyphotography.us/blog">photography business</a>, I just fell off the radar.” Not nice....not nice at all.<br />
<br />
So on my freshly starched piece of notebook paper, between lose my last 30 lbs of baby weight (from 3 years ago), and de-clutter my life, I have BLOG, written in BIG, BOLD letters. <br />
<br />
I’ve realized that I may not be an every day blogger, but I still have plenty to share in words and pictures. I’ve really honed in on what this project should be about, and I can’t wait to share it with you!<br />

You know the age old question....if you were stuck on a deserted island....what three things would you bring....<br />

well besides a boat....so I could actually get off the island....I would have to put a lifetime supply of BBQ and Pizza up there as part of my "top three" things.....Then.....one night....back in the early 2002....I was introduced to something spectacular....that would not only shake up my limited culinary box....but also allow me to combine two of my three "island" things.....and leave room for a new third item.....<br />

This finger licking, napkin needing, delicious pizza....will shoot anyone to the top of their cooking game, and it's so stinking easy!!!!<br />

<b>Ingredients</b><br />
<b><br /></b><br />
or as Teresa from the RHONJ likes to say....."ingredients-es"<br />
<br />
1 lb skinless chicken breast halves<br />
(best to get the thin sliced chicken breasts)<br />
<br />
1 1/3 C. purchased bbq sauce<br />
6 oz. shredded Gouda cheese<br />
6 oz. crumbled Feta cheese<br />
<br />
16 oz. purchased Pizza Crust<br />
(I like Boboli)<br />
<br />
1/2 medium purple onion sliced into rings<br />
1/4 C. fresh Cilantro<br />
<br />
<br />
<b>Directions</b><br />
<b><br /></b><br />
in a large resealable bag, combine the chicken breasts with half of the bbq sauce (2/3 C.) Marinate in the fridge anywhere from 4 hours to overnight.<br />
<br />
Preheat oven to 450 degrees<br />
<br />
heat grill pan to medium high. Cook chicken flipping on each side to cook evenly. Cook 15-20 minutes, or until juices run clear, and chicken is no longer pink. Cut chicken into small pieces.<br />
<br />
Spread the remaining 2/3 C. bbq Sauce onto purchased pizza crust. Sprinkle with Cheeses, top with onion and chicken. Place pizza in oven, and cook for 12-15 minutes. <br />
<br />
Remove Pizza from Oven. Sprinkle with fresh Cilantro.<br />

Last week, I had the immense pleasure in partaking in bunco group's annual Drunko game. This usually is played around a gorgeous pool...on a warm summer evening. Tiki torches are burning, the harmonious sounds of Jimmy Buffet playing in the background....<br />

some hunky husbands/bartenders, to cater to our every whim....<br />
<br />
and since I'm obsessed with Themes.....I had to bring a little sumthin sumthin...that screamed "drunko"<br />
<br />
so why not combine my love of Cupcakes.....with one of the best summer drinks in THE universe....<br />

Dip Apple Slices into Batter, throughly coating both sides. Deep fry 1-2 minutes on one side, then flip, making sure both sides get nice and evenly browned. Drain, then sprinkle with 1/4 C. Salsa (I like mine Medium)</div><div>1/2 c. shredded Monterrey Jack Cheese</div><div>1 c. Shredded Cheddar Cheese</div><div>2 oz Diced green chilies </div><div>olive oil</div><div>24 Wonton Skins</div><div>Sour Cream</div><div><br /></div><div><br /></div><div>1. In Large Skillet, brown sausage over medium heat, breaking up the large pieces, so that it is crumbly. When sausage is done, remove with slotted spoon and drain remaining grease. Discard grease from skillet, then return the sausage. </div><div><br /></div><div>2. Add salsa, cheese, and green chilies to the sausage, and simmer until the mixture thickens, about 5 minutes. Turn off heat, and let cool to room temperature</div><div><br /></div><div>3. Preheat oven to 350 degrees, Brush 24 mini muffin cups with olive oil. Press 1 wonton wrapper into each muffin cup. Fill each prepared cup with a full Tablespoon of Sausage mixture. </div><div><br /></div><div>4. Bake Wontons for 1o minutes at 350 degrees, until edges of wonton wrapper begin to brown. Then Transfer the Wontons from the muffin tin, to a baking sheet. <br /></div><div>These Two Recipes are So Fast....and So Simple that it even works on those busy Kid Crazy days.....when you want a fast, filling...and Healthy lunch......</div><div>

<br /></div><div>1 Large Tomato Seeded and Chopped</div><div>1 Purple Onion Chopped</div><div>1 Large Banana Pepper Seeded and Chopped</div><div>2 cloves Garlic Minced</div><div>1/4 C. Fresh Cilantro Chopped</div><div>Juice of Two Limes</div><div>Salt and Pepper to Taste</div><div>
<br /></div><div>Mix all Ingredients together in a large bowl.</div><div>
<br /></div><div>And There You Have it! Pico is best eaten within a day of it's creation.....It doesn't keep well after that....though I don't think anyone will have a problem finishing it off!</div><div>
<br /></div><div>Now you'll need your Pico De Gallo for the Super Delicioso Black Bean Burritos....</div><div>

<br /></div><div>1 tsp minced garlic</div><div>1 15 oz can black beans drained and rinsed</div><div>1 tsp ground coriander</div><div>1/2 c. sour cream</div><div>1/2 c. Pico De Gallo</div><div>4-67 inch Flour Tortillas</div><div>1 c. grated Monterey Jack Cheese</div><div>
<br /></div><div>In a large Saucepan, combine garlic, beans, coriander, sour cream, and Pico De Gallo Cook over Medium heat, about 5 minutes, until thoroughly heated. </div><div>
<br /></div><div>Meanwhile, sprinkle tortillas with water and place between 2 damp paper towels. Heat in Microwave for 30 seconds. </div><div>
<br /></div><div>Divide Bean Mixture between tortillas, sprinkle with Cheese, roll up and serve with more of that amazing Pico De Gallo on the Side</div><div>

<br /></div><div>The only thing right now that is keeping me from throwing in the towel and saying....go ahead...be the only kid in 5th grade to wear Diapers...if they even make them that size.....is that I will have a moment, where the clouds will part, and the sun shines....as I did yesterday, when Noah actually ran into the bathroom, moved his little stool, climbed on....and proceeded to pee on his foot....but.....</div><div>

<br /></div><div>Though at one point, during the height of the storm, I truly felt as if the worst was going to happen....and wondered if I should have high tailed it to higher ground.....instead of trying to be the tough one, and stick it out....</div><div>

With the wonderful help of The Few Fellas who were left to hold down the fort....All us ladies put on our games faces and showed our husbands exactly what we are made of....and that is that they married some tough chicks....</div><div>

<br /></div><div>But Saturday Afternoon, as the skies grew darker, and the rain began to arrive....we decided to play a little...</div><div>

<br /></div><div>Those boys needed to get their run on, before we snuggled in under a mound of blankets, eating our Hurricane rations of Chocolate Chip cookies, Rice Crispy Treats....and watching a marathon of All Things Animated......</div><div>

<br /></div><div>Not only do I not need to water my lawn for the next month, but Irene also allowed me a good solid 36 hours straight to devote to potty training....something I desperately needed....</div><div>

<br /></b></div><div>1 lb. Italian Sausage, Casings Removed</div><div>1 onion, diced</div><div>2 cloves garlic, diced </div><div>6 c. Beef Broth</div><div>1 16.5 oz can Diced Tomatoes, drained</div><div>1 16.5 oz can Tomato Sauce</div><div>1/2 c. GOOD Dry Red Wine</div><div>1 Zucchini sliced and quartered</div><div>1 Carrot Sliced</div><div>1 Green Bell Pepper Diced</div><div>16 oz bag Frozen Cheese Tortellini</div><div>Grated Parmesan Cheese</div><div>

<br /></div><div>1. In Skillet, Brown Sausage...when sausage is browned, add onion and garlic and saute 5 minutes until soft.</div><div>
<br /></div><div>2. In Stock Pot, add Beef broth, Tomatoes and Tomato Sauce, Red Wine, Zucchini, Carrot, Pepper and Sausage Mixture. Bring to Boil, then lower temperature to med/low...simmering for 60-90 minutes.</div><div>
<br /></div><div>3. Add Tortellini, and cook an additional 5-10 minutes until heated through</div><div>
<br /></div><div>4. Serve with Crusty Bread, and top with Grated Parmesan Cheese</div><div>

<br /></div><div>Let's just say, while Daddy is away, mommy and the boys, like to go play! And this weekend, we went and played in the Big Apple....which luckily for us, is a hop skip and a short train ride from our suburban oasis in South Jersey.....</div><div>
<br /></div><div>Though, I have to throw it out there, that Penn Station needs to work on being a little more ....stroller friendly? As my posse and I commenced the disembarking of our NJ transit train on Track 8 of NY Penn Station.....the left front wheel of my expensive yet cumbersome double jogging stroller.....disengaged itself...and fell between the train and platform....to the track below....</div><div>

<br /></div><div>and some blank stares from any and all NJ Transit workers...on whether said wheel could be retrieved.......</div><div>
